At Nanaim, we cultivate several varieties of olive tree to produce our oil.
Frantoio and Leccino, which make up the bulk of our trees, both originate from
Maalot, a new Israeli varietal, is based on the North African Chemlali and is present at a level of about 1% in our oils. The trees are dispersed throughout the grove for improved fertilization of the olive flowers and add a touch more fruitiness to the overall taste.
Our olives are harvested when the olives have reached an optimal ripeness and cold-pressed very close to picking time. This ensures the oil is extra virgin quality (0.3 - 0.7% free fatty acids) and low in peroxides (8-15). Low peroxide level indicates oil that is fresh with a high level of anti-oxidants, one of the key ingredients that make olive oil a healthy food.
